Cancoillotte is a runny cheese which is very low in fatty matter and contains high protein. It is originally from Franche-Conte district in eastern France. The climate of the district is quite similar to Takasu area where the maker located.

So the maker, Takasu Farmaers Inc., sent their staff to Franche-Conte to learn how to make the cancoillotte. And in 2006 they succeeded in the product development.
