そば/蕎麦, soba is buckwheat noodles. One of the key of making delicious soba is the water. 郡上匠そば(Gujo Takumi-soba) is made in Gujo-Shirotori, a rich-clear-water region.

It is eaten either hot in soup or as a cold dish with a dip. 薬味(yakumi, condiments) give them special flavors: ねぎ(negi, minced green onions), わさび(wasabi, Japanese horseradish), 唐辛子(tougarashi, hot red pepper).
There are various soba dishes at their restaurant. The most popular one is 天ざる蕎麦(ten-zarusoba), cold soba with tempura.

The packed Takumi-soba noodles (raw/dried) are sold at stores.
