Oku-no-Oku, doburoku

Oku-no-Oku is a doburoku, the unrefined sake, and tastes thick and rich. It is made by Motai-Kobo, originally a Tofu maker which is located in the most upper area of the Kurisu River in Yamato district in Gujo city. The location of the store is of great advantage to make the tasty Oku-no-Oku to them because of its climate of the valley.

The coldest time in winter is the best season to make doburoku. One of carefully selected ingredients is their homemade rice. The grain of their rice is smaller than ordinary one, and contains rich taste. Another one is the groundwater from the Motai-Eboshi, a 1,300-meter mountain.

This is a great place to go and see what Japanese Satoyama culture is.
